Amaretti Virginia - Confectionery and Biscuit Creations Since 1860
Sweets and delicacies are enjoyed by all ages. Able to capture everyone's attention, they are a must-have on the table, even after a hearty meal.
Amaretti are no exception. These small, round almond paste candies, with which the Ligurian company Amaretti Virginia has been synonymous with quality in Italy and worldwide for over a century and a half.
Since its founding in 1860 in Sassello, in the province of Savona, Amaretti Virginia has been a symbol of quality and refinement. Today, they offer an extensive range of Amaretti (Italian macaroons).
The History of Amaretti Virginia
First, a brief overview of the history and composition of this italian "macaroon", which has become a staple of Italian confectionery. The term "amaretto" (the singular of 'amaretti') refers to a type of biscuit/macaroon made from almond paste, prepared with sugar, egg whites, sweet and bitter almonds, and apricot kernel. There are two types of amaretto: the Saronno variety, known for its crumbly and crispy texture, and the Sassello variety, of which Amaretti Virginia is a prominent representative.
It is worth mentioning that the confectioner who produced this incredible delicacy for the city of Savona achieved such fame that it even lent its name to the square where it was located: "Piazza degli Amaretti Virginia," even appearing on old postcards.
Thanks to their unique taste and acquired reputation, these Italian macaroons quickly gained appreciation at the most important international exhibitions.
Among these: a first-place diploma and medal at the Colombiadi in Genoa in 1892, and a gold medal and special honor in Paris in 1911, where Virginia's delicate flavors impressed a high-level jury. These awards are still preserved in Amaretti Virginia's historical archives.
Attempts to imitate Amaretti Virginia were so numerous from the beginning that the company’s founder placed the Virginia brand under the protection of the Kingdom of Italy's laws in 1897.
Amaretti Virginia: Between Tradition and Modernity
At Amaretti Virginia, tradition is accompanied by a constant quest to develop production through the continuous evolution of the culinary and confectionery world.
The century-old experience passed down by the brand’s founders is thus combined with the modernity of new tools and machines available to confectioners and employees who, relying on their valuable creativity, direct their work towards the main objective of Amaretti Virginia's production philosophy: the continuous pursuit of absolute quality.
A passage from the company's official website perfectly explains this concept:
"At Amaretti Virginia, it’s not the products and recipes that adapt to technology, but rather the machines that are specially designed to respect the product."
The entire company, therefore, adapts to what the process demands, the true master of the operation. It is not the worker who creates the pastry, quite the contrary, the food conditions the person and their movements.
Since 1860, Amaretti Virginia has brought color and fragrance to Italian tables with its wide range of products. The current assortment includes not only the famous soft macaroons available in different flavors but also a broad production of confectionery specialties, including traditional candies and other delights for all holidays and occasions. However, it is the macaroons that outshine the competition, dominating all of Amaretti Virginia's confectionery creations, thanks to their centuries-old history and consistently maintained top-quality.
Amaretti Virginia Products
The famous Sassello macaroons, while retaining their classic spherical shape, are much softer than the Saronno macaroons mentioned earlier, reminiscent of marzipan in texture. Although the amaretto (singular of amaretti) was born in Italy as early as the Middle Ages, before spreading to Arab countries and throughout Europe through trade, the Sassello variety has its origins in a much later idea, around the 19th century: the original recipe has never changed over the decades and is still used today, made of sugar, sweet almond powder, egg whites, and bitter almonds.
