Cavallucci, typical Christmas cookies from Tuscany
Cavallucci are one of the most famous Christmas treats in Tuscany, dating back to the Renaissance, when the Church Council distributed panpepato and cavallucci to its members. These traditional biscuits, originating from Siena specifically, have a soft texture and are made from flour, nuts, candied fruits, anise, and spices. The biscuits, called cavallucci, were originally stamped with the image of a horse and were named after the "cavallari" (horsemen) who traveled in two-wheeled carts and often stopped at the osterie (taverns) to refresh themselves. According to tradition, in Siena, two cavallucci and a piece of panforte are enjoyed at Christmas.
