This barista milk comes from very special cows - Jersey milk cows. They originally come from the Channel Island of Jersey. Their coats are typically caramel brown and their noses white. Unlike the milk of a conventional Holstein cow, that of Jersey cows is naturally richer in vitamins, proteins, minerals and fat. The latter is what sets this milk apart from all others. It has a fat content of 6%. And we all know that fat is the best flavour carrier, there is. It makes it incredibly creamy in taste and the milk foam it produces is the best you've ever seen.
Husbandry and Nutrition
In the whole of Holland, only just under 3,500 Jersey cows graze on the farms of the farmers who have joined together to form the Jersey Milk trade association. The Jersey cows live in pastures and fields all over Holland. You can even visit the farms at one of the many "open days". Since the forage is the main determinant of the taste and quality of the milk, the farmers always ensure a high variety of different grasses on their pastures. This gives the cows a good mix of healthy nutrients, vitamins and minerals. Holland Jersey milk is an official pasture milk.
This means that the cows graze on pasture for at least 120 days a year and for at least 6 hours a day. The optimal comfort temperature for cows is between -7 and 17 degrees Celsius. If they are too cold, they prefer to go into the stable. But they also don't like temperatures that are too warm, otherwise they suffer from heat stress. Unlike humans, cows cannot sweat, which is why they prefer to lie in the shade and do not move often. Jersey cows also prefer to go "home" to their stable to chew their food and digest in peace and quiet. The farmers prefer to open the doors if possible so that the cows can decide for themselves where to stay.
The Most Sustainable Milk in the World
The Jersey cow is the breed with the smallest environmental footprint in the world. This is due to their unique efficiency. To produce the same amount of milk as a conventional cow, the Jersey cow needs 30% less feed. Accordingly, it also produces about 30% less manure.
