The beans come from the highlands of South America and Africa, where they are hand-selected to be later roasted through Mille Soli's special roasting process.
This nearly century-old roasting tradition serves as a daily standard for the company’s operations: the tradition of the great-grandfathers, slowly roasting coffee over wood fires, continues to be honored. In this drum roasting process, different types of beans are roasted separately in sacks, as each variety needs particular care and a unique roasting time.
Wood-fired roasting not only gives the coffee its distinctive taste but also imparts other unique qualities that an industrially produced coffee cannot achieve.

Because of the longer roasting at lower temperatures, the coffee contains significantly less caffeine than many others. The wood-fired roasting gives the beans a slight oiliness—an important mark of quality! The oilier the bean, the thicker and firmer the crema. The extended roasting process at low temperatures greatly reduces the formation of tannins and bitter compounds, resulting in a smooth, gentle coffee.
